Genovese Basil is perhaps the most famous sweet basil variety in the world. Known for its use in pesto, the best Genovese Basil is said to be grown in western Genoa, Italy. So, why is Genovese Basil so special? Its round leaves are dark green and appear more matte than those of its shinier cousin, Common Basil. The taste is also more ‘matte’, if that makes sense – the basil flavour is more concentrated and is somehow less sweet. What is certain is that Genoese people take their beloved baxaicò (as they call it) and their pesto very seriously; Genovese Basil has even gained DOP (Protected Designation of Origin) status from the Italian Government.

When it comes to dwarf-type tomatoes, Tiny Tim is a reference point for the category, with a pedigree that dates back to 1800. Interest in dwarf tomatoes began in Europe in the late sixteenth century. In the following four centuries, notable horticulturalists and seedsmen contributed to the breeding selection, leading to, among many other varieties, this compact tomato, developed in 1949 at the University of New Hampshire. The result is astonishing: an erect, tree-like plant with short branches, curled to wrinkled leaves of a remarkably deep green colour and, last but not least, clusters of delicious, cherry-size, bright red fruits!

San Marzano tomatoes are, without doubt, gods of the tomato world. And, like any other god, they have their own creation myth: the story goes that the first San Marzano seed came to Italy in 1770 as a gift from the Viceroyalty of Perù to the Kingdom of Naples. They were first grown in San Marzano sul Sarno village and have since become known as ‘the most important industrial tomato of the twentieth century’. With its firm, thick flesh and sweet taste, this variety was found to be perfect for the manufacture and exportation of pelati (peeled, tinned whole tomatoes), which have become popular all over the world. Indeed, pizza and pasta would not be the same without these distinctive, pointy, bright-red fruits.

The name ‘Nepeta’ is derived from the Etrurian city of Neptic, where, historically, this catnip plant is thought to have grown extensively. In France, where catnip is called herbe aux chats, it was used to make tea, prior to the arrival of Chinese teas. Nowadays, the most well-known use of catnip is as a attractant for cats. It’s the nepetalactone compound that our furry friends are drawn to – it has strong behavioural effects across the cat family. It’s a little-known fact, however, that only two-thirds of cats are sensitive to catnip. The other third simply don’t enjoy those strange rubbing, rolling pawing, licking and chewing behaviours often seen in catnip-loving felines.

Nasturtium Blue Pepe is a unique European variety bred specifically for culinary use. The name is derived from its wonderful steel-blue leaves with purplish undersides. The flowers themselves are also edible and their bright-red hue makes an attractive addition to salads, as well as being perfect for garnishing stir fries. The leaves have a slightly peppery taste, reminiscent of watercress. The flavour becomes spicier when the flowers are grown in sunnier, hotter weather. The flowers are less intensely flavoured than the leaves but they add a dramatic, colourful zing to any recipe. Nasturtiums were first cultivated in Perù and were introduced to Europe by the Spanish conquistadores in the 16th century.

Thai Pink Egg is one of the most beautiful tomatoes cultivated today. As its name implies, it has smooth, pink-red skin and is shaped like an egg. Hailing from Thailand, it is a variety from the Southeast-Asian grape tomato family (characterised by a plum-like shape, thicker skin and higher sugar content than standard tomatoes). The variety seems to have been popularised after Nichols Garden Nursery in the U.S.A. began to stock it in 1997. Since then, its beautiful and delicious fruits have spread across the globe, being found at farmer’s markets and in gourmet restaurants far and wide. If you go to Thailand, don’t forget to ask for kanchanaburi, which is not only the name of a Thai province, but also the local name for this tomato.

Wildfire/Wasabi is a perennial variety of Wild Rocket, with deep green, serrated foliage that makes an attractive garnish for any dish and mesclun-style salad. An alternative to the usual Rocket, Wild Rocket has a distinctive wasabi taste and its young leaves can be picked in succession. Despite the fact that Wasabi Rocket has never actually met its powerfully punchy namesake, the Wasabi Root, and that it doesn't quite bring tears to your eyes in the same way that the reduced root paste, a popular sushi accompaniment, does, it nevertheless adds a certain taste of the Orient and a dose of horseradish heat to our everyday meals. The Jalapeño chili is named after the city of Xalapa in Mexico, where the pepper was traditionally cultivated. But Mexicans also know it by the names chile gordo, meaning ‘fat chili pepper’, and cuaresmeño, referring to its traditional place on the Lent food table. Its first recorded appearance (as chipotle, i.e. smoke-dried jalapeño) is in the Florentine Codex manuscript, where priest and ethnographer Bernardino de Sahagún reported how popular peppers were with Aztecs in the 16th century: they were used in cooking, medicine and certain cultural ceremonies. Nowadays, jalapeños are grown extensively across Mexico and the thick-walled fruits are known worldwide.

Cape Gooseberry is a nightshade plant native to Brazil that is actually closer to a tomato than a berry. Its delicious yellow-orange fruit, wrapped inside a peculiar paper - or lantern-like cape, can be considered a sweet version of the cherry tomato, with a sour note that reminds one of a cranberry. Its complex flavour was enough to capture the interest of an English pastry chef in 18th century England, who grew the plant after it was imported from the New World. Cape Gooseberry plants are very easy to grow in pots and require so little maintenance that they will easily re-seed in sunny, frost-free spots in your container garden!

Parsley Gigante d’Italia is a deep green, broad-leaved plant, with strong stalks, a fresh, slightly spicy aroma and a tangy-sweet flavour. Also known as Sellerina, because its long stalks can also be eaten like celery, parsley is a particularly high yielding variety that is well suited to autumn cultivation due to its resistance to the cold. Although parsley is a favourite of chefs worldwide, it has often been associated with death and evil. According to Greek mythology, the plant sprouted from the blood of the infant prince Archemorus, who was killed by a serpent. Later on, it became associated with Satan—since parsley seeds have a slow germination rate, the popular belief was that the seeds had to travel to hell and back many times before they could germinate.

Erfurter Orangefarbige is a variety of calendula bred specifically for its medicinal virtues. Although the whole plant has long been used as a culinary and medicinal herb, the bright orange flowers alone are recommended for kitchen use today, since the leaves are very bitter. The flowers are mild tasting and slightly sweet, and can be used both in savoury and sweet dishes – the nickname ‘pot marigold’ comes from its popular use in the soup pot. When dried, its petals, which have been called ‘poor man’s saffron’, can be used to create a natural dye or, funnily enough, in chicken feed to make egg yolks extra vibrant!

As the name suggests, Red Rubin Basil is a red-coloured basil. More specifically, it has dark, reddish-purple leaves and stems, making it most appealing for salads and garnishes. Another small difference from regular basil is that Red Rubin has a stronger flavour. Evidence of a reddish basil dates back to the 1830s, when the English botanist George Bentham first discovered an ‘opal’ strain of the plant. It wasn’t until 1950, however, that a genuine red/purple basil cultivar was created: the Dark Opal. Red Rubin is a new, improved variant of this cultivar, having larger, more deeply purple leaves and being less prone to areas of green developing.

Mrs. Burns’ Lemon Basil is a legendary heirloom plant that has been grown since the 1920s, when it was owned by Mrs. Clifton of Carlsbad, New Mexico. She gave the seeds to Janet Burns, an organic gardener, who introduced the citrusy, aromatic herb to the world in 1939. Its intense lemony flavour meant that it became an instant hit with fine chefs and gardeners alike! The lemon-scented, light-green leaves can be used in cooking, eaten raw and even added to baked treats. Funnily enough, Mrs. Burns’ Lemon Basil (AKA Ocimum basilicum var. citriodora) is not actually a variety of lemon basil; it is a kind of sweet basil. And a total one off.

Ocimum tenuiflorum (also Ocimum sanctum), commonly known as holy basil, or Tulsi, is an aromatic perennial plant native to the Indian subcontinent that is cultivated widely throughout Southeast Asia for religious and traditional medicine purposes, such as in herbal teas in Ayurveda. The leaves also are used in the worship of Vishnu, while the plant is viewed as protective for the home. With such grandiose uses, it may seem outrageous to use it in cooking. Nonetheless Tulsi is well-known in Southeast Asia cuisine, and during the hot summer months, you should be able to find big bunches of it at farmers' markets with ethnic stalls.

Snapdragon Brighton Rock is an heirloom variety that comes with a lovely blend of pastel bi-coloured blooms. The common name snapdragon originates from the fact that the flower looks like a dragon's mouth having its throat squeezed. If that’s not bizarre enough, the flower seed pods turn into creepy skulls when they die. Perhaps it is because of this ambiguous appearance that in the Victorian language of flowers, it symbolised deception and presumption. Fun fact: Only large insects like bumblebees can pollinate snapdragons because the petals are too heavy for smaller insects to push apart.

Shiso, also known as ‘Japanese Basil’, raises a question with all who taste it: is it a basil or a mint? Neither one nor the other, Shiso has a unique taste that is hard to describe. Some say it’s ‘citrusy’, while others call it ‘herbaceous’ – and others still call it ‘sweet’! What is undisputable is that it can be used to give flavour and colour to many different Japanese dishes, from umeboshi to sushi and sashimi. Its green and purple, jagged-edged leaves are becoming more widely used in Western gourmet cooking and mixology, although it has been around since Victorian times, when shiso was popular as a landscape plant. And its appeal extends beyond its crazy flavour and attractive appearance – the old martial-arts masters claimed that shiso kept them flexible, youthful and vital.

Lavender is a perennial flowering plant native to the Mediterranean. Though he has engaged with a variety of mediums—watercolor, photography, sculpture—Brazilian artist Luiz Zerbini (born 1959) has devoted the past several years to the creation of monotypes. He selects leaves, flowers and branches for their distinctive shapes and textures and places them on an inked metal plate. He then lays a large sheet of paper over the plate so that the botanical compositions are transferred onto the page. Mentha x piperita is a natural hybrid of Mentha spicata and Mentha aquatica. Its dark, green leaves have a characteristic sweetish, strong scent and an aromatic, warm, pungent taste, with a cooling aftertaste. It’s probably the most important commercial aromatic herb in the world, believed to have been first cultivated in ancient Egypt, although its official cultivation record begins in England in 1750. Greek Oregano (Origanum vulgare var. hirtum) is a subspecies of common oregano, with a much stronger flavour and fragrance. Graced with beautiful white flowers, Greek Oregano is said to have been invented by the Grecian goddess of love, Aphrodite herself! This myth led to the Greek tradition of crowning newly married couples with wreaths of the herb. The term ‘oregano’ can be translated loosely from Greek as ‘joy of the mountains’, a fitting name for a plant found in the naturally rocky habitat of its homeland. Over the centuries, culinary and medicinal uses of oregano spread from Europe to China via the ‘spice road’, before reaching the New World thanks to the American soldiers who discovered it during the Italian Campaign.
